Lamb Rack with Euboean Herbs and Pomegranate Sauce

Ingredients

  • 1 Greek Lamb rack
  • Mix for Lamb Elaia&co (thyme, oregano, rosemary)
  • Juice from 2 pomegranates
  • Red wine
  • Balsamic vinegar Reale
  • Honey Meligyris
  • Extra virgin olive oil Aenaon
  • Salt Afrina, pepper Batavia
  • 1 Greek Lamb rack
  • Mix for Lamb Elaia&co (thyme, oregano, rosemary)
  • Juice from 2 pomegranates
  • Red wine
  • Balsamic vinegar Reale
  • Honey Meligyris
  • Extra virgin olive oil Aenaon

Instructions

  1. Season the lamb rack with salt, pepper, and herbs and rub with olive oil.
  2. Roast in the oven at 180°C for about 1 hour.
  3. In a saucepan, boil the pomegranate juice with wine, balsamic vinegar, and honey until thickened.
  4. Serve the lamb rack with the pomegranate sauce.
