Smoked Chicken with Sour Frumenty (Trahana) and Bergamot

Ingredients

  • 4 chicken breasts
  • 200g sour frumenty Taygetos (trahana)
  • 1 leek
  • 1 carrot
  • 1 onion
  • Βergamot
  • Extra virgin olive oil Aenaon
  • Lemon juice
  • Salt Floros, pepper Batavia

Instructions

  1. Smoke the chicken breasts over beech wood for about 30 minutes.
  2. Cook the trahana barley with the leek, carrot, and onion until soft.
  3. Mix the trahana with the bergamot and add olive oil and lemon juice.
  4. Serve the chicken over the trahana and season with salt and pepper.
