Creamy Risotto with Truffle , Wild Mushrooms and Graviera Kritis

Ingredients

  • 300g rice Arosis
  • 1 liter vegetable broth
  • 200g wild mushrooms (e.g., porcini)
  • 1 small onion
  • 2 garlic cloves
  • 100ml white wine
  • 50g grated Graviera Kritis cheese
  • 30g truffle
  • Extra virgin olive oil Aenaon
  • Extra virgin olive oil with Truffle San Pietro
  • Butter
  • Salt Floros, pepper Batavia

Instructions

  1. Sauté the mushrooms with a little olive oil and garlic.
  2. In a saucepan, sauté the onion with the rice until translucent.
  3. Add the white wine and stir until evaporated.
  4. Gradually add the vegetable broth, stirring constantly until absorbed.
  5. Stir in the mushrooms, truffle, Graviera Kritis, Truffle oil, and a little butter.
  6. Season with salt and pepper and serve hot.
