Langoustines with Saffron and Fava

Ingredients

  • 6 fresh langoustines from Greece 
  •  fava beans Arosis
  • 1 onion
  • 1 carrot
  • 1 leek
  • Saffron Kozanis
  • Extra virgin olive oil Theo
  • Salt Floros, pepper Batavia

Instructions

  1. Boil the fava beans with the onion, carrot, and leek until soft.
  2. Puree the fava and add a little olive oil.
  3. In a pan, sauté the langoustines with a little olive oil.
  4. Add saffron and continue cooking for a few more minutes.
  5. Serve the langoustines over the fava and drizzle with olive oil.
